Smooth, sweet and nutty with a long caramel finish. Affineur Marcel Petite select, and then ripen Comté from small cheese makers for Waitrose. In 1996 they discovered Fort de Saint-Antoine, a disused military fort in the mountains. The fort buildings have a constant micro climate all of their own and it just happens to be perfect for slowly ripening cheese. Made from unpasteurised cow's milk.
