Highland Park’s incomparable balance comes from a tension between the aromatic Orkney peat and the sweetness of oak casks seasoned with Oloroso sherry. History and Heritage. Origin/Location. Orkney is abundantly rich in heritage; the Islands have been inhabited for over 5,500 years and each successive culture has added to the legacy of Orkney. This legacy encompasses remarkable Neolithic sites, haunting wartime remains and stunning listed buildings. In addition, the Islands offer an unspoilt environment of breathtaking beauty and clarity. The Orcadians are justifiably proud of their history, dialect and traditions; traditions which, since 1798, include Highland Park single malt Scotch whisky. Highland Park is happy to reciprocate; we are proud of our Orcadian roots. History. Highland Park will forever be associated with Magnus Eunson, who founded the distillery at the end of the 18th century. Eunson was a beadle by day and a smuggler at night, the latter operation based from his bothy on the High Park above Kirkwall where the Highland Park distillery now stands. There may be little evidence of him being an illicit distiller but, over 210 years of distilling history in the same site - resulting in Highland Park arguably becoming the most respected single malt in the world - is evidence enough that he knew his whisky. Production. Floor Malting: The distillery has 2,000 square feet of stone floors where the malt is traditionally turned every eight hours to promote succulence and balance in Highland Park. Aromatic Peat: Drying the malt over aromatic Orkney peat imparts distinctive aromas giving our whisky a unique sweet smokiness. Cold Maturation: Orkney’s cool climate encourages even maturation adding balance to our whisky. Sherry Oak Casks: Maturation in expensive sherry oak casks contributes richness, natural colour and complexity. Cask Harmonisation: Highland Park is married in oak casks to ensure consistency and continuity
