The Emmi Company have been maturing cheese since 1782. They select the best cheese from small-scale dairies in the Canton of Friboug, then ripen them for up to 14 months in the labyrinthine sandstone Kaltbach caves, near Lucerne. Made from unpasteurised cow's milk.

Keep refrigerated below 5ºC Once opened, consume within 3 days. To enjoy at its best remove from refrigeration an hour before serving
