Tip the stuffing mix into a bowl, pour over 200ml of boiling water and add a knob of butter or lug of olive oil. Give it a good stir and allow to stand for 10 minutes. Fill or top your chicken or pork, then cook until piping hot and cooked through. Alternatively, make up the stuffing and bake in a greased ovenproof dish at 220�C/425�F/gas 7 for 15 to 20 minutes, or until golden brown. Serves 4 to 6.
