Our dry aged Native breed wing rib is naturally tender and full of flavour and makes a great centerpiece when entertaining. Each one is wrapped in muslin and matured on the bone for a minimum of 30 days, producing flavoursome beef. All of our Native breed beef is British and from known farms, that are part of the Waitrose producer group. Waitrose Native breed beef is produced from cattle bred from registered pedigree bulls from our Native breed schemes

Preparation & Storage
- Wash hands, all surfaces and utensils after touching raw meat. Remove from the packaging.
TYPE TEMP RARE MEDIUM WELL DONE Electric 180�C 20 mins 25 min 30 mins per 500g (1/2kg) Fan 160�C 20 mins 25 mins 30 mins per 500g (1/2kg) Gas Mark 4 20 mins 25 mins 30 mins per 500g (1/2kg) + 20 mins + 25 mins + 30 mins Place the meat in a roasting tin in a pre-heated oven. Ensure that the surface of the meat is thoroughly cooked. Leave to rest in a warm place for 10-15 mins before carving. Do not reheat once cooled. ( Oven: 180�C, Fan: 160�C, Gas: Gas Mark gas 4)
