- You Will Need1 medium egg yolk, 280ml (1/2 pint) water.10 minutes to prepare30 minutes to setMake Your Filling1 HeatPour the contents of one sachet into a saucepan.Mix in 280ml (1/2 pint) of water and 1 medium sized egg yolk.Stir continuously, over a low heat until the mixture bubbles and boils.Simmer for 1 minute.2 CoolRemove from heat.Pour liquid into serving dish and allow to cool.Lemon Meringue PieAdditional ingredients needed: Pre-baked 18cm (7") pastry case, 2 medium egg whites, 110g (4oz)caster sugar.1 Prepare Your BasePre-heat oven to 150°C (140°C for fan oven)/ 300°F/Gas Mark 2.Place pre-baked pastry case onto baking tray.Pour lemon flavoured pie filling (see side of pack for instructions) into pastry case and allow to cool.2 Prepare Your MeringueWhisk 2 medium sized egg whites until stiff.Whisk in caster sugar (a quarter at a time) until all sugar is combined and meringue forms peaks.Spread meringue over filling until completely covered.3 Bake and ServeBake in centre of oven for 25 minutes.Serve warm or cold. If warm, allow to rest for 15 minutes before serving.
