Produced by Simon and Tim Jones on their farm in the village of Ulceby, on the edge of the Lincolnshire Wolds. The fresh, unpasteurised milk from their own herd of Holstein-Friesian cows is sent directly into the cheese vat from the milking parlour. The cheese is typically matured for 18 months.
