- Président Emmental Cauliflower and Broccoli BakePreparation time: 10 minCooking time: 35 minServes 41 medium cauliflower, approx 600g - 250g broccoli florets - 30g Président unsalted butter - 30g plain flour - 450ml semi skimmed milk, warmed - 1 tsp Dijon mustard - Pinch cayenne pepper - 150g Président grated Emmental cheese. Topping: 20g Président unsalted butter - 2tbsp horseradish sauce - 75g fresh breadcrumbsPreheat the oven to 190°C/374°F/gas mark 5.Put the cauliflower into a steamer and cook for 4 minutes, add the broccoli and continue to cook for a further 3-4 minutes until just tender. Transfer the vegetables to a buttered baking dish.While the vegetables are steaming put the Président butter, flour and milk into a pan,Whisking all the time, bring gently to simmer then lower the heat and cook for a further 3 minutes.Add the mustard, cayenne and the Président grated Emmental cheese and return to the heat, stirring until the cheese has melted, pour over the vegetables.To make the topping, melt the Président butter in a frying pan, remove from the heat and add the horseradish sauce. Add the breadcrumbs and toss to coat. Scatter over the dish then place in the oven to bake for 25 minutes until the topping is crisp and golden.Serve with a salad or crusty bread.
