Nam Pla Fish Sauce is a condiment made from salted anchovies that are matured and pressed, for use in Thai cooking.
Blend with cooked prawns, ginger, lemon grass, spring onions and coriander, mould into fish cakes and gently fry. Use to make Thai green curry by mixing with green curry paste, coconut milk and chicken.

Place 75g of sushi rice with 300ml cold water per person in a saucepan Bring to the boil, stirring occasionally. Reduce the heat to very low and simmer for 18 - 20 minutes or until the water has been absorbed. Remove from the heat and cover. Leave to stand for 10 minutes. (Time 18-20 minutes)
