Place 75g of sushi rice with 300ml cold water per person in a saucepan Bring to the boil, stirring occasionally. Reduce the heat to very low and simmer for 18 - 20 minutes or until the water has been absorbed. Remove from the heat and cover. Leave to stand for 10 minutes. (Time 18-20 minutes)
