Ingredients: 2 x 15ml (2tbsp) olive oil 1 Onion finely chopped 2 Garlic cloves, finely chopped 8 Tomatoes, deseeded and diced 1 Sachet of toasted saffron 1 x 15ml (1 tbsp) Paprika 100g (4oz) Tiger prawns, peeled and deveined 100g (4oz) Monkfish, skinned, boned and diced 250g (9oz) Waitrose bomba rice 500ml Fish or vegetable stock (hot) 100g (4oz) Mussels, cooked still in shell (hob icon - 20-23 mins) Cooking instructions. Cook in a wide shallow pan. Place the olive oil in the shallow pan and heat. Add the onions. Gently fry onions until soft but not coloured. Add the garlic, tomatoes, toasted saffron, stir and cook for 5 minutes. Add prawns and monkfish and fry gently for a further 3-4 minutes. Stir in the rice and the stock. Once bubbling leave uncovered and simmer without stirring for 12-13 minutes or until the rice has absorbed all the liquid. Stir in the mussels. Serve immediately.
