Unearthed French tarte flambée
IDEAL AS A LUNCHTIME SNACK OR MIDWEEK MEAL.The first tartes flambées were cooked by Alsatian bakers on the base of their bread ovens where drips would flare around the tarte, giving it the characteristic smoky flavour.Lighter and more delicate than pizza, this version is the Traditionelle - a thin pastry base topped with sliced onion, crème fraîche and tasty smoked lardons. A firm French favourite.
