If you have time, leave the batter to rest – it allows the gluten to relax, which makes the pancakes lighter. You could make the night before and keep it covered in the fridge.

Remember that the first pancake will always be the worst. They improve as you work out the best heat and the right amount of batter.

Be patient! Wait for the surface of the pancake to feel dry before you flip it over. Use a palette knife to peek underneath and see if it has turned golden before you toss.
