Pitahaya

Pitahaya

A member of the cactus family, pitahaya means 'scaled fruit' and comes in many different guises. The most common type has a knobbly yellow skin filled with opaque white flesh dotted with small black seeds. Sweet, syrupy and juicy, it makes a refreshing treat on a hot summer's day. Pitahaya are ripe when their skin turns from green-yellow to full yellow.

To store: Store at room temperature for a few days, or in the refrigerator for longer periods. If the skin starts to shrivel, it is overripe.

To prepare: Cut the fruit in half and scoop out the flesh including the seeds with a teaspoon.
