Baked spinach & feta eggs

1-2 tsp butter
1 tbsp olive oil
½ tsp cumin seeds
Pinch chilli flakes
200g spinach leaves, washed
50g feta cheese, crumbled
2 British Blacktail Large Free Range Eggs


1 Preheat the oven to 180°C, gas mark 4. Grease two ovenproof ramekins or gratin dishes with the butter.

2 Heat the oil in a large frying pan or wok, add the cumin seeds and cook for a minute, then add the chilli flakes and spinach leaves and cook gently, stirring often, until completely wilted, then season.

3 Divide between each dish and sprinkle over the feta cheese. Crack an egg into each one.
