Baked chicory with caramelised onions

4 chicory heads, halved through the middle

3 red onions, cut into wedges

3 tbsp light brown soft sugar

½ tsp chilli flakes

2 tbsp extra virgin olive oil

2 tbsp cider vinegar


  1. Preheat the oven to 190˚C, gas mark 5. Put the chicory and onions in a baking dish and sprinkle over the sugar and chilli. Drizzle with the oil and vinegar. Season.
  2. Place in the oven. Bake for 35 minutes until golden and caramelised. Serve hot or at room temperature.
