Cheese, onion & tomato tart

320g pack frozen Puff Pastry Sheet defrosted  
25g butter
2 onions, sliced
2 tbsp caramelised onion chutney
200g cherry tomatoes, halved
50g Waitrose Mature Cheddar Cheese, grated  
3-4 sprigs fresh thyme


1. Preheat the oven to 200°C, gas mark 6.

2. Unroll the pastry sheet, place on a large baking tray upside down and remove the plastic film.

3. Melt the butter in a frying pan, add the onions and fry for 4-5 minutes until golden. Stir in the chutney and mix through. Spread over the pastry, leaving a 2cm border around the edges.

4. Add the tomatoes and sprinkle over the cheese and thyme. Bring up the edges of the pastry. Bake in the preheated oven for 20-25 minutes until the pastry has puffed up and the tomatoes have softened. Serve with a mixed green salad.
