Chicken, basil & bulgur wheat salad


100g Waitrose Love Life Bulgur Wheat
40g pine nuts, toasted
50g sun-dried tomatoes in oil, chopped, plus 2 tbsp of the oil
200g roasted chicken breast, shredded
½ x 25g pack basil, shredded
Zest and juice of ½ lemon



1. Place the bulgur wheat in a small saucepan with 150ml boiling water, cover and simmer gently for 4-5 minutes, allow to cool and stir in the pine nuts, chopped tomatoes, chicken and basil.

2. Whisk together the lemon zest and juice with the tomato oil, toss into the salad and season.

  • Total time: 15 minutes 15 minutes
