Chicken & bean stew

1 tbsp oil
330g pack chicken
breast chunks
1 Waitrose Duchy Organic Carrot, sliced
1 Waitrose Duchy
Organic Leek, sliced (selected stores)
350g from a 600g tub Waitrose Duchy Organic Tomato & Thyme Soup
400g can cannellini beans, drained and rinsed
2 tbsp chopped parsley


1. Heat the oil and fry the chicken, carrot and leek for 5 minutes. Add the soup and cannellini beans, cover and cook for 5 minutes, or until the chicken is cooked throughout with no pink meat.

2. Stir in the parsley and serve immediately.
