Chicken, potato and mint slaw

200g essential Waitrose New Potatoes
2 x 140g pack essential Waitrose Wafer Thin Roast Chicken, shredded
1 essential Waitrose Carrot, grated
150g essential Waitrose White Cabbage, shredded
100g essential Waitrose Half Fat Mayonnaise
Zest and juice of ½ essential Waitrose Lemon
½ x 25g pack mint, leaves chopped


1. Cook the whole potatoes in boiling water for 15-20 minutes until tender, drain and cool.

2. Meanwhile, mix together the remaining ingredients.

3. Coarsely grate the potatoes and gently mix into the slaw. Season to taste.
