Chicken tikka masala


4 essential Waitrose British chicken breasts

1 tbsp essential Waitrose olive oil

2 onions, sliced

1 garlic clove, crushed

1 red chilli, chopped

1½cm fresh root ginger, grated

½ x 200g Cooks' Ingredients tikka paste

227g can essential Waitrose chopped tomatoes

2 tbsp chopped mint

2 tbsp chopped coriander

150g essential Waitrose low fat natural yogurt

1 lime, juice


  1. Chop the chicken into 3cm pieces. Heat the olive oil in a large pan, add the onions and cook for 8–10 minutes until soft. Add the garlic, chilli and ginger and cook for 2 minutes, then stir in the tikka paste, chicken and tomatoes and gently simmer for 10 minutes.
  2. Meanwhile, mix the mint and coriander with 50g yogurt and season. Stir the remaining yogurt into the curry and heat through, then remove from the heat and stir in the lime juice.
  3. Serve immediately with the mint and coriander chutney, naan and plain rice.
