Chickpea & chorizo stew

120g pack Waitrose Cooks’ Ingredients Diced Chorizo
1 onion, chopped
400g can chickpeas, drained
400g can chopped tomatoes
4 salad onions, sliced
2 tbsp chopped parsley


1. Fry the chorizo and onion in a large pan for 3-4 minutes. Add the chickpeas, tomatoes and 100ml water, cover and simmer for 5 minutes.

2. Stir in the salad onions and chopped parsley, season and serve.
