Courgette & mixed herb salad


6 large courgettes, trimmed
2 green chillies, finely diced 
100g fat-free Greek yogurt
½ tsp ground allspice
Finely grated zest and juice 1 lemon
20g pack fresh dill, leaves only
25g pack fresh flat-leaf parsley, leaves only 
25g pack fresh mint, leaves only


1 Coarsely grate the courgettes and place in a colander. Set aside to drain while you make the dressing. 

2 In a large bowl, mix the chillies with the yogurt, allspice, lemon zest and juice, then season to taste. 

3 Add the grated courgette and whole herb leaves to the yogurt dressing, then gently toss together. Serve immediately.

  • Preparation time: 15 minutes

Serves: 6-8 as a side
