Cranberry & Bramley Sauce

Serves: 6
300g fresh or frozen cranberries
100g light brown soft sugar
1 clementine, zest and juice
1 medium bramley apple, peeled, cored and cut into 1.5cm chunks
small splash fruity red wine (optional)
1. Put all the ingredients in a large saucepan with a pinch of salt. Cover and cook over a gentle heat, stirring for about 5 minutes, until the sugar has dissolved. Turn up the heat and simmer briskly for 8-10 minutes, stirring often, until the cranberries have just burst and the sauce has thickened to a loosely jammy consistency.
