Crispy vegetable bake

510g jar Pelagonia Grilled Aubergines
400g frozen essential Waitrose Grilled Vegetable Mix
150g tub Sacla’ Pronto Stir-in Pasta Sauce With
Spicy Pepper & Smoked Garlic
½ x 400g pack Waitrose Crispy Potato Slices


1. Preheat the oven to 200°C, gas mark 6. Drain the aubergines and reserve 1 tbsp oil. Heat this oil in a frying pan and fry the grilled vegetables for 3 minutes, then stir in the pepper sauce and cook for a further 1 minute.

2. Lay 1/3 of the aubergines in the base of an ovenproof dish, top with half the grilled vegetable mixture. Add another 1/3 of aubergines and then the remaining grilled veg. Add the final layer of aubergines.

3. Arrange the potato slices on top and bake for 20-25 minutes until golden, crispy and piping hot through.
