Cucumber, lime and mint agua fresca


2 large cucumbers, roughly chopped
8 limes, juice
small handful mint
120g caster sugar

1 lime, sliced
ΒΌ cucumber, sliced
4 mint sprigs, leaves picked


1. Whizz together the cucumbers, lime juice, mint, sugar and 250ml cool water in a blender, until smooth. Pour through a fine sieve, lightly pushing it through with a spatula to release as much liquid as possible. Cover and chill for up to 24 hours, until needed. Fill a medium-sized glass jug with ice cubes, lime slices, cucumber slices and mint leaves. Stir the sieved liquid well and pour into the jug to serve
