Dhruv Baker's Buttered new potatoes

Prepare: 5 minutes                  Cook: 15 minutes

Serves: 8


  • 1kg new potatoes or Jersey Royals (when available)
  • 25g unsalted butter


1. Place the potatoes in a pan with salted water and bring to the boil then cook for 15 minutes or until tender.  Drain and set aside.

2. While the potatoes are cooking melt the butter in a small saucepan and allow to foam then continue to cook for a further 2-3 minutes till the butter starts to change colour then pour over the potatoes.

3. Season with salt and pepper then toss to coat the potatoes evenly in the butter and seasoning.
