Giant Couscous with Feta and a Cumin Dressing

3 tbsp lemon juice

4 tbsp extra virgin olive oil

1 tsp ground cumin

1 tsp paprika

1 red chilli, finely chopped


200g giant couscous or 250g regular couscous

500g carrots, peeled and sliced

2 tbsp chopped flat leaf parsley

2 tbsp chopped coriander leaves

200g feta, crumbled

5 salad onions, finely sliced

4 tbsp toasted pine nuts

2 tsp sumac



1. Combine the dressing ingredients; season.

2. Cook the couscous following packet instructions. Cook the carrots in boiling water for 1–2 minutes, until tender. Drain and put both in a large bowl. Pour over the dressing, add the herbs and toss well.

3. Place on a platter and scatter with the feta, salad onions, pine nuts and sumac.
