Gnocchi with vegetables in a tomato and mascarpone sauce

500g pack essential Waitrose 
1 tbsp oil
400g frozen essential Waitrose Grilled Vegetable Mix
350g tub essential Waitrose Tomato and Mascarpone Sauce


1. Cook the gnocchi in boiling water for 3 minutes, drain and return to the pan.

2. Meanwhile, heat the oil in a frying pan and fry the vegetables for 3 minutes, add the sauce and cook for a further minute. Stir into the gnocchi and serve in wide rimmed bowls.
