Grilled cabbage with goats' cheese, walnuts and orange

Serves: 4-6
2 pointed cabbages
5 tbsp olive oil
140g hard goats’ cheese, grated
1 tsp ground cumin
100g crème fraîche
50g walnuts, toasted and roughly chopped
handful mint leaves
1 orange, segmented
1. Preheat the oven to 170˚C, gas mark 3. Heat a griddle pan or grill until hot. Peel off the outer layers of the cabbages, cut both into quarters and brush the cut sides with 2 tbsp oil; season. Char the cabbage for 2-3 minutes on each side, either in the griddle pan or under the grill, until golden brown and almost burned. Transfer the cabbage to a baking tray and roast for 25-30 minutes until tender in the centre.
2. Stir the grated cheese and cumin into the crème fraîche. Serve the cabbage warm, topped with the goats’ cheese mixture, walnuts, mint and orange, then drizzle with the remaining 3 tbsp olive oil.
