Grilled cod with basil and lemon grass

  • Gluten Free


  • 1 clove garlic, finely chopped
  • 1 stick lemon grass, finely chopped
  • ½ x 25g pack fresh basil, shredded
  • Large pinch of ground turmeric
  • 4 tbsp Waitrose Organic Low Fat Natural Yogurt
  • 2 skin-on Waitrose Line Caught Prime Icelandic Cod Fillets, about 150g each
  • 150g pack Waitrose Mange Tout Peas


  1. Mix together the garlic, lemon grass, basil, turmeric, yogurt and some seasoning. Spoon over to coat the cod and leave to marinate for 15 minutes. Arrange the cod fillets on a baking sheet.
  2. Preheat the grill. Grill the fish for 3–4 minutes on each side, turning once until the flesh is firm and opaque. Lightly steam the mange tout. Place the cod on top of the mange tout and serve with rice.

Cook's tips

You can replace the cod with any firm white fish such as haddock or pollack.
