Grilled mackerel with lemon and fennel couscous

4 x 120g mackerel fillets
125g essential Waitrose couscous
200ml boiling water
2 fennel bulbs
zest and juice of ½ lemon,
100g essential Waitrose cherry tomatoes, halved
4 salad onions, sliced
1 tbsp olive oil
2 tbsp chopped parsley
1 Place the couscous in a bowl and cover with the boiling water. Cover and leave to stand for 15 minutes.
2. Fluff up the couscous with a fork, finely slice the fennel bulbs and mix in along with the lemon juice and zest. Add in the cherry tomatoes, salad onions, sliced, olive oil and parsley.
3. Preheat the grill to medium. Cook the mackerel for 4-6 minutes, turning halfway through cooking. Serve the grilled mackerel with the lemon and fennel couscous salad.
