Heston's gin sour cocktail

Bracing and refreshing, this is a pre-prohibition classic brought bang up to date with the addition of ruby port and a dash of Angostura bitters.
210g heston from Waitrose earl Grey and Lemon Gin
21⁄2 lemons, cut into wedges
Dash of angostura bitters
120g ruby port
1. Put the gin, lemon wedges and Angostura bitters in a cocktail shaker and fill to the top with ice cubes. Put the lid on the shaker and, holding the top, shake vigorously for 10 seconds. Pour into 6 chilled tumblers.
2. Carefully pour 20g port over the surface of each drink before serving.
