Heston’s Prawn cocktail
For the Marie Rose sauce:
55g tomato ketchup
¼ tsp cayenne pepper
6 drops Worcestershire sauce
1 tsp lemon juice
Seeds scraped from ½ a vanilla pod
Salt and freshly ground black pepper
50g little gem lettuce, shredded
4 cherry tomatoes, halved
Half an avocado (approx 65-75g), diced
12 cooked jumbo king prawns
45g Marie Rose sauce (see above)
1 To make the Marie Rose sauce, combine the tomato ketchup, mayonnaise, cayenne pepper, Worcestershire sauce and lemon juice in a bowl.
2 Add the vanilla seeds, season with salt and pepper then mix thoroughly.
3 Combine the lettuce, tomatoes, avocado, jumbo king prawns and 45g of the Marie Rose sauce.
4 Divide between two glass serving dishes to serve.
