    Lamb, feta & bulgur salad

    Lamb, feta & bulgur salad

    Serves: 2


    1½ tbsp extra virgin olive oil
    2 lean lamb leg steaks
    300g pack Waitrose
    Bulgur Wheat, Quinoa
    & Rainbow Vegetables
    75g frozen soya beans, defrosted
    100g cherry tomatoes, halved
    50g feta, crumbled
    Juice ½ lemon


    1. Heat ½ tbsp oil in a frying pan and fry the lamb for 2-3 minutes each side. Remove and set aside to rest.

    2. Meanwhile, place the bulgur wheat mix and soya beans in a large bowl and microwave for 2 minutes. Then stir in the tomatoes, feta, remaining oil and lemon juice. Season and serve with the lamb.
