leek and potato soup

my husband and myself love this recipe so we thought we would share it with you.

Serves: 2


  • 6 large potatoes
    1 large onion ( chopped )
    3 leeks ( chopped )
    500ml of vegetable stock
    half a cup of single cream
    two teaspoons of cornflour


  1. peel and chop all vegetables. place them all in a large saucepan. pour over boiling water just to cover the top of the vegetables wait for it to start boiling then simmer for 30 mins
  2. drain all the water.and mash all the vegetables together add the cream,stock,and the cornflour. mix it altogether to get the desired thickness. once made eat immedily
