    Lemon Thyme Couscous

    This simple accompaniment is great for mopping up the tasty sauces. Measure all the ingredients into a large dish and finish off before serving.

    • Preparation time: 5 minutes, plus 10 minutes standing
    • Total time: 15 minutes 15 minutes

    Serves: 8

    Ingredients

    • 500g pack Waitrose Couscous
    • ½ pack fresh lemon thyme, chopped
    • 1 tbsp Marigold Swiss Vegetable Bouillon Powder
    • Finely grated zest and juice of 1 lemon, plus fine strips of lemon zest, to garnish
    • 1 pack fresh flat leaf parsley, finely chopped
    • 4 tbsp olive oil

    Method

    1. Sprinkle the couscous into a heatproof dish. Add the thyme and bouillon powder, lemon zest and juice. Stir well.
    2. Add 900ml boiling water, cover and leave to stand for 10 minutes until the liquid has been absorbed. Fluff up with a fork and stir in the parsley and olive oil. Season to taste and garnish with lemon zest.
