    Limoncello sponge layers

    Serves: 4

    Ingredients

    ½ x Waitrose Madeira Loaf Cake, cut into 8 slices
    4 tbsp limoncello liqueur
    475ml tub Waitrose Seriously Intense Italian Limoncello Gelato, softened
    25g pistachio nuts, chopped

     

    Method

    1. Roughly break up 4 cake slices and divide between 4 wine glasses. Drizzle over 2 tbsp of limoncello.

    2. Spoon over half the gelato. Break up the remaining cake slices, and divide between the glasses. Drizzle with the remaining limoncello.
    Then top with the remaining gelato, sprinkle with the nuts and serve.
