mango and tomato salsa

provides texture, colour and fresh flavours without many calories

  • 1 large mango (ripe but not soft)
    8 cherry tomatoes, roughly chopped
    1 heaped tbsp chopped fresh coriander leaves
    1/2 small red chilli, deseeded and diced
    grated zest and juice 1/2 lime
    salt and freshly ground black pepper


  1. Peel mango, then slice flesh off the stone and cut in rough dice. Mix with rest of the ingredients, season and chill for about 15 mins before serving.
