Maple-Glazed salmon

1 lime, zest, and juice of 1⁄2

1 tbsp maple syrup

2 tsp reduced salt soy sauce

2 garlic cloves, finely chopped

1⁄2 red chilli, deseeded and finely sliced

10g fresh root ginger, finely grated

1 tsp sesame oil

2 salmon fillets

1 tsp sesame seeds


  1. Mix all the ingredients (except the salmon and sesame seeds) in a bowl, then add the salmon, skin-side up, and leave to marinate for 15 minutes. Preheat the oven to 200 ̊C, gas mark 6.
  2. Put the salmon, flesh-side up, on a small baking tray, pour over the marinade and sprinkle with the sesame seeds. Bake for 15 minutes, until cooked through. Serve with rice, steamed greens and lime wedges, if liked.
