Maple-roast apples with fresh ginger cream

Serves: 4
4 x No.1 Best Of British Apples, quartered and cored
6 tbsp maple syrup
75g cold, unsalted butter
50g hazelnuts, roughly chopped
125g essential Creamy Soft Cheese
40g piece fresh root ginger, peeled and finely grated
3 tbsp single cream
2 tbsp caster sugar
1 tsp lemon juice
1. Preheat the oven to 200°C, gas mark 6. Place the apples, cut-side up, in a roasting tin and drizzle with the maple syrup. Slice the butter on top and bake for 10 minutes. Baste the apples with the syrup, scatter with the nuts and bake for a further 5-10 minutes, basting once more, until the apples are tender and the syrup has thickened.
2. While baking, put the soft cheese in a bowl and beat with a wooden spoon to soften. Add the ginger, cream and sugar and continue to beat until completely smooth.
3. Transfer the ginger cream to serving plates. Place the apples on top. Stir the lemon juice into the syrup and drizzle over to serve.
