Marinated Tofu with green lentils in a napolitana sauce

This dish only takes 15 mins to make and is a tasty but not too spicy nutritious meal. If preferred, the Quorn could be exchanged for chorizo sausage cut into chunks.

  • 2 tbsp olive oil
    1 finely chopped onion
    150 g sliced chestnut mushrooms
    1 large jar Waitrose Napolitana sauce with Tomato
    1 pack of Waitrose Chilli Flavoured Noodles
    1 can Epicure green lentils (drained and rinsed)
    a few roughly chopped basil leaves, plus a few extra to garnish


  1. Fry the onion and mushrooms in the olive oil for a few mins until tender. Add the chopped basil .
  2. Add the quorn pieces and stir for 2 mins. Add the Napolitana sauce and lentils, stir for another 2 mins. Finally add the noodles. Mix in gently for a furthur 3 mins. Serve in deep pasta bowls and garnish with the remaining basil leaves.
