    Marmalade and Orange Flower Ice Cream

    Marmalade and Orange Flower Ice Cream

    If you're not fond of floral flavours, use whisky instead of orange flower water. Either way, this incredibly easy ice is delicious with baked fruits.

    • Total time: 10 minutes plus freezing 10 minutes

    Serves: 6

    Ingredients

    • 568ml carton whipping cream
    • 325g orange marmalade
    • 30g icing sugar
    • Juice of ½ lemon
    • 1 tsp orange flower water (or to taste)

    Method

    1. Beat the cream, marmalade and icing sugar together with an electric beater until thick enough to just hold a trail but still floppy. Add the lemon juice - the acid in the juice will thicken the mixture, so it's important not to overbeat it prior to this. Add the orange flower water.
    2. Churn the mixture in an ice-cream machine according to the manufacturer's instructions. Alternatively, freeze in a shallow container, beating the mixture every hour for the first 3 hours to break up ice crystals. Either way, leave in the freezer until fully set, then serve with waffle biscuits.

    Ice cream can work remarkably well with sparkling wines. Try this with a decent Asti, full of scents of orange and fresh grapes.
