½ tbsp olive oil
200g essential Waitrose Frozen Grilled Vegetable Mix
1 Duchy Originals From Waitrose Organic Wholemeal MuffinWith Seeds & Oats
25g Duchy Originals From Waitrose Organic Farmhouse Cheddar Cheese, grated


1. Heat the oil in a small frying pan and fry the vegetables for 3-4 minutes.

2. Meanwhile, halve the muffin and toast for 1-2 minutes. Mix half the cheese with the vegetables and spoon on top of the muffins, sprinkle over the remaining cheese and place under a preheated grill for 1 minute until melted and golden.

3. Serve straight away with a leafy green salad.
