milk tart

This is my version of a well-known South African favourite. It is something that is unique, and everyone seems to have their own, particular, version. This is mine, adapted from a recipe given to me by a Mauritian lady who used to work for us in Durban.

  • Total time: +- 45 minutes

Serves: 6


  • EASY MILK TART. (Makes 2 tarts)

    140gms self-raising flour
    1 ml salt
    65gms sugar
    100 g butter
    1 extra large egg, beaten.

    750 ml milk
    80 g butter
    45gms self-raising flour
    1 ml salt
    4 extra large eggs, separated
    75gms sugar
    ground cinnamon for sprinkling


  1. Base: Sift flour and salt. Add sugar. Rub in butter. Add beaten egg, mix well and spread dough into base of two greased 23 cm pie dishes.
  2. Filling: Heat milk in a heavy-based saucepan and add butter. Sift flour and salt, add egg yolks and sugar and beat well. Add some of boiled milk to egg mixture, stir and pour back into saucepan. Boil for a few minutes until thick, stirring constantly, and remove from heat. Beat egg whites until soft peak stage and fold lightly into cooked mixture.
  3. Pour filling into bases. Bake in a preheated oven at 180 °C for 20 minutes, sprinkle ground cinnamon over the top and bake for another 10 minutes.
