Minced beef tortilla soup

250g essential Waitrose British Beef Lean Mince (typically 10% fat)
1 tsp mild chilli powder
400g can essential Waitrose Cream of Tomato Soup
600ml beef stock
195g can essential Waitrose Sweetcorn, drained
1 bunch essential Waitrose Salad Onions, sliced
1 x ½ 28g pack coriander, chopped (optional)
100g Waitrose Lightly Salted Tortilla Chips
170ml tub essential Waitrose Soured Cream
1. Brown the minced beef and chilli powder in a large saucepan for 1–2 minutes. Add the soup, stock and sweetcorn, bring to a simmer and gently cook, covered, for 10 minutes, adding the salad onions for the last 2 minutes.
2. Stir in the coriander (if using) and spoon into 4 bowls. Top with a handful of the tortilla chips and a spoonful of soured cream.
