    Mixed berry fro-yo lollies

    • Preparation time: 15 minutes + cooling and freezing
    • Cooking time: 6 minutes to 8 minutes
    • Total time: 21-22 minutes + cooling and freezing

    Makes: 6 lollies

    Ingredients

    190g pack Mixed Berries
    50g caster sugar
    450g Yeo Valley Raspberry & Passion Fruit Yogurt 

    Method

    1. Put the raspberries from the mixed berries into a small saucepan with the caster sugar and 1 tbsp water. Cook over a medium heat for 6-8 minutes, stirring occasionally, until the berries have broken down into a slightly thickened sauce. Remove from the heat and leave to cool.

    2. Meanwhile, slice the blueberries in half horizontally. Put the yogurt into a bowl and stir through half of the cooled raspberry sauce. Stir the blueberries into the remaining raspberry sauce.

    3. Using 6 x 100-125ml lolly moulds, alternate the layers between yogurt and raspberry sauce (placing some of the blueberries cut-side out against the walls of the moulds, to look pretty), until all the ingredients have been used.

    4. Push the lolly sticks in place, then carefully put into the freezer and leave for at least 6 hours or preferably overnight, until firm. Remove from the moulds to serve, when needed.
