Moroccan-style haddock in spicy tomato sauce

1 tbsp olive oil
3 cloves garlic, crushed
¼ tsp hot smoked paprika
1 tsp ground cumin
3-4 Waitrose 1 Red Choice Tomatoes (about 200g), roughly chopped
1 tsp honey
1 tsp lemon juice
240g pack boneless haddock fillets
300g pack cauliflower and kale couscous
2 tbsp natural yogurt
Chopped parsley, to serve
1. Heat the oil in a saucepan over a medium heat. Add the garlic and spices, and fry gently for 2-3 minutes until fragrant. Add the tomatoes, honey and lemon juice. Season and simmer for 5 minutes until the tomatoes have broken down.
2. Add the fish to the pan, turn the heat to low, cover with a lid and simmer gently for 5 minutes until the fish is cooked through and opaque. Take off the heat and leave to sit for 2 minutes.
3. Heat the couscous in the microwave according to the pack instructions and serve with the fish and tomato sauce with a spoonful of natural yogurt and some chopped parsley to garnish.
