Oat bircher with honey-roast nuts & mixed berry compote

Serves: 4-6
100g jumbo rolled oats
300g Waitrose Duchy Organic Thick and Creamy Natural Yogurt
200ml semi-skimmed milk, plus extra
2 apples, coarsely grated with skin on (leave the core)
½ tsp vanilla paste
1 orange, finely grated zest and juice (about 5 tbsp)
180g pack Waitrose Duchy Organic Fruit & Nut Mix
1½ tsp clear honey
½ tsp vegetable oil
For the compote
300g pack Waitrose Duchy Organic Berry Mix (frozen)
2 tbsp clear honey, plus extra to taste and serve
1. In a large mixing bowl, mix the oats, yogurt, milk, grated apple, vanilla and orange zest and juice. Stir in the dried fruit from the fruit and nut mix, then cover and chill overnight.
2. Meanwhile, preheat the oven to 160°C, gas mark 3. Line a small roasting tin with baking parchment. Put the reserved nuts, honey, oil and a pinch of salt into the tin, then rub with your hands until the nuts are coated. Roast for 10-12 minutes until the nuts are golden. Cool.
3. To make the compote, put the berries and honey in a medium saucepan. Cover and bring to a simmer, then cook for 2-3 minutes, until the fruit is soft and juicy. Add extra honey to taste if needed.
4. When ready to serve, loosen the Bircher with a little milk if needed, then serve with the compote, nuts and a drizzle more honey.
