    Orange and Dill Flavoured Trout Fillets

    Serves: 1 trout per person


    • Trout fillets
    • Butter
    • Fennel
    • Orange
    • A selection of fresh herbs
    • Vinaigrette


    1. Cook under a grill for 3-4 minutes on each side or fry in a little butter for 6 minutes, turning half way through. Alternatively bake them, uncovered, in a lightly oiled dish in a preheated oven 190°C, 375°F, gas mark 5 for 10-15 minutes or until thoroughly cooked.
    2. Serve with fennel and orange salad: slice a fennel bulb and cook in boiling water for 3-4 minutes, drain, and mix with orange segments, a sprinkling of fresh herbs and a little vinaigrette.
