    Oriental rice noodle salad

    • Vegetarian

    Serves: 2


    • 3 radishes, sliced
    • 1 bundle rice noodles, cooked and cooled
    • 2 salad onions, finely sliced
    • ½ large carrot, grated
    • 2 tbsp tinned sweetcorn
    • 2 tbsp soy sauce
    • 1 tsp sesame oil
    • 1 tsp Cooks' Ingredients Tamarind Paste
    • 1 handful baby spinach
    • 1 tsp sesame seeds


    1. Place the noodles in a large bowl. Add all the ingredients except the spinach and sesame seeds. Gently mix everything together until the noodles are coated.
    2. Lay the spinach in the bottom of a deep serving bowl. Top with the noodles and sprinkle with sesame seeds.
